Tomatoes / Pomodori

 

Tomatoes and basil are surely lovers. A perfect match! I look forward to those 6-8 weeks of summer in New York when the tomatoes are at their peak. They are so juicy, lively and sweet. If you make sauce from fresh tomatoes this is the time to take advantage of their ripeness. Since it is difficult to get very ripe tomatoes for the rest of the year, I suggest making tomato sauce from high quality canned whole peeled plum tomatoes. You can still eat your favorite tomato salad during winter, it just won’t jump off the plate the way it does in the summertime.

 

Never refrigerate tomatoes!
