This is my comfort food! My mother’s panacea, and the one dish that carries with it vivid memories of childhood.

6 cups homemade chicken broth 
2 eggs
4 sprigs fresh Italian parsley
½ cup pastina, ditalini or any small pasta
4 tbsp grated Parmesan cheese

 Serves 4

  1. Bring broth to a boil, add pasta and return to boil. Cook al dente.
  2. In a small bowl, beat eggs with cheese and parsley.
  3. Stirring constantly, slowly pour the egg mixture into the broth and swirl until eggs begin to set.
  4. Remove from heat, season to taste with salt and pepper and ladle into bowls.
