This is my comfort food! My mother’s panacea, and the one dish that carries with it vivid memories of childhood.
6 cups homemade chicken broth
4 sprigs fresh Italian parsley
½ cup pastina, ditalini or any small pasta
4 tbsp grated Parmesan cheese
- Bring broth to a boil, add pasta and return to boil. Cook al dente.
- In a small bowl, beat eggs with cheese and parsley.
- Stirring constantly, slowly pour the egg mixture into the broth and swirl until eggs begin to set.
- Remove from heat, season to taste with salt and pepper and ladle into bowls.
