Oregano / Origano

When I was ten years old, I vacationed in Italy for the first time with my parents and my sister. We stayed in my Father’s hometown of Domanico, Calabria (Pop. 950). I have vivid memories of picking my way through acres of oregano fields, the smell was intoxicating. To this day, every time I smell oregano, it takes me back to Calabria.

Unlike many other herbs, oregano dries perfectly. Use it in tomato salads, or to season chicken, roasts or potatoes.
